To make 4 cakes, I sift together 3/4 cups of flour, 1 1/2 tablespoon sugar, 1/4 teaspoon of salt, 2 teaspoons baking powder, and a 1/2 tablespoon cinnamon in my red sifter that I absolutely could not live without. I love that it sifts directly into a container and it's total bonus that it is red since that is the accent color of my kitchen.
In a separate bowl, I whisk together 1 egg, 1/2 cup of milk, 1 tablespoon of corn syrup, 2 tablespoons melted butter, and 1 1/2 teaspoons of vanilla extract. Add the flour mixture and it's ready for the griddle.
I absolutely love my electric griddle and can't even believe how much I use it. I set it to 350, spray it with cooking spray and drop 4 dollops of batter on using a 1/4 cup measuring cup. When they start to bubble, it's time to flip for just another 30 seconds to a minute.
While the pancakes are cooking I actually use a quarter of the original icing recipe which I find to be sufficient. I put 1/2 cup confectioners' sugar and 1/2 teaspoon of vanilla in a small bowl and then add just a splash of milk (probably less than a tablespoon) to bring it together to the consistency I want. Make sure the icing is thick as it will melt when you add it to the warm pancakes. And enjoy this rare morning indulgence!
